Ingredients

  • 0.33 Cups butter
  • 0.33 Cups all-purpose flour
  • 4 Cups skim milk
  • 6 Large baking potatoes, peeled
  • 1 Cup sour cream

Steps

  1. Microwave the baking potatoes until they are fully cooked.
  2. While the potatoes are cooking, prepare a roux over low to medium heat by mixing the butter and flour. Stir continuously to avoid burning.
  3. Once the roux has thickened slightly, gradually blend in the skim milk. Continue cooking over low to medium heat.
  4. Peel and cut the cooked potatoes. Optionally, mash some of the potatoes for a creamier texture.
  5. Add the potatoes to the milk mixture and blend in the sour cream.
  6. Serve the soup hot, and garnish with your choice of toppings such as chopped green onions, grated cheese, or additional sour cream.
