- 3 Cloves garlic, minced
- 0.5 Cups onions, minced
- 2 Cups mushrooms, sliced
- 5 Whole potatoes, peeled
- 2 Cups carrots, sliced
- 6 Cups milk
- 2 11 Ounces (oz) cans condensed cream of Cheddar cheese soup
- 2 Tablespoons (tbsp) all-purpose flour
- 2 Cups Cheddar cheese, divided
- 0.5 Cups green peas, frozen
- 0.5 Cups corn kernels, frozen
- 1 Cup broccoli florets, divided
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- In a large skillet over medium-high heat, combine olive oil, garlic, onions, and mushrooms. Sauté for about 5 minutes, or until the onions are tender. Remove from heat and set aside.
- In a large pot over high heat, combine potatoes and carrots. Add water to cover, bring to a boil, then reduce heat to low. Cover and simmer until vegetables are tender. Drain the water and add milk. Continue to cook over low heat until milk starts to simmer.
- Stir in the cheese soup, then gradually add flour, stirring until mixed. Add 1.5 cups of the cheese, the reserved mushroom mixture, peas, corn, and broccoli. Heat through.
- Garnish with the remaining 0.5 cup of cheese before serving.
