  • 1 Tablespoon (tbsp) olive oil
  • 3 Cloves garlic, minced
  • 0.5 Cups onions, minced
  • 2 Cups mushrooms, sliced
  • 5 Whole potatoes, peeled
  • 2 Cups carrots, sliced
  • 6 Cups milk
  • 2 11 Ounces (oz) cans condensed cream of Cheddar cheese soup
  • 2 Tablespoons (tbsp) all-purpose flour
  • 2 Cups Cheddar cheese, divided
  • 0.5 Cups green peas, frozen
  • 0.5 Cups corn kernels, frozen
  • 1 Cup broccoli florets, divided
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large skillet over medium-high heat, combine olive oil, garlic, onions, and mushrooms. Sauté for about 5 minutes, or until the onions are tender. Remove from heat and set aside.
  2. In a large pot over high heat, combine potatoes and carrots. Add water to cover, bring to a boil, then reduce heat to low. Cover and simmer until vegetables are tender. Drain the water and add milk. Continue to cook over low heat until milk starts to simmer.
  3. Stir in the cheese soup, then gradually add flour, stirring until mixed. Add 1.5 cups of the cheese, the reserved mushroom mixture, peas, corn, and broccoli. Heat through.
  4. Garnish with the remaining 0.5 cup of cheese before serving.
