Ingredients

  • 2 Cups (cups) water
  • 5 Small potatoes, peeled
  • 1 Teaspoon (tsp) salt
  • 0.125 Teaspoon (tsp) black pepper, ground
  • 2 Tablespoons (tbsp) butter
  • 6 Cups (cups) green onions, sliced
  • 12 Baby carrots, peeled
  • 1.5 Pounds (lb) fresh green beans, sliced
  • 2 Cups (cups) green peas, fresh
  • 2 Cups (cups) half-and-half
  • 3 Tablespoons (tbsp) all-purpose flour

Steps

  1. Heat 2 cups of water to boiling in a medium pot; add the peeled potatoes. Reduce heat and simmer until potatoes are tender, approximately 15 to 20 minutes.
  2. Add 1 teaspoon of salt, 0.125 teaspoon of ground black pepper, 2 tablespoons of butter, green onions, baby carrots, and green beans to the pot; simmer until the vegetables are tender. Then, add the fresh green peas.
  3. In a small bowl, stir together 2 cups of half-and-half and 3 tablespoons of all-purpose flour until smooth. Stir this mixture into the simmering vegetables.
  4. Cook, stirring constantly, until the soup is slightly thickened. Serve immediately.
