Serving Size: 10
Cooking Time: 150 minutes
Ingredients
- 4 Tablespoons (tbsp) vegetable oil, divided
- 2.5 Pounds (lb) skinless, boneless chicken breast halves
- 1 Whole onion, minced
- 3 Cloves garlic, minced
- 2.5 Quarts (qt) chicken broth
- 3 Cups water
- 4 Tablespoons (tbsp) chili powder
- 1 Pinch salt, to taste
- 1 Teaspoon (tsp) dried oregano, crumbled
- 3 Cups white hominy, drained
- 10 Whole tostada shells
Steps
- Gather all the ingredients to ensure you have everything ready.
- In a deep skillet, heat 2 tablespoons of vegetable oil over medium-high heat. Add the chicken breasts and cook until they are no longer pink and the juices run clear, about 20 minutes. Remove from the skillet, let them cool, and then shred the chicken using a fork.
- In the same skillet, heat the remaining 2 tablespoons of vegetable oil over medium-high heat. Add the minced onion and garlic, cooking and stirring until they are soft and translucent, about 5 minutes.
- Return the shredded chicken to the skillet. Stir in the chicken broth, water, chili powder, salt, and oregano. Reduce the heat to low, cover, and let it simmer for about 90 minutes to allow the flavors to meld.
- Add the hominy to the skillet and cook until it is tender, about 15 minutes more. Taste and adjust the seasonings, adding more salt and chili powder if desired.
- Serve the pozole in soup bowls, accompanied by a tostada shell. Garnish with your choice of thinly sliced radishes, shredded lettuce, finely chopped onion, chopped cilantro, and lime wedges for an extra burst of flavor.
