- 2 Pounds (lb) beef soup bones
- 2 Quarts (qt) water
- 12 Medium carrots, minced
- 6 Medium potatoes, cubed
- 1 Whole head cabbage, shredded
- 3 Medium onions, minced
- 1.5 Tablespoons (tbsp) fresh parsley, minced
- 10 Whole allspice berries
- 1 Teaspoon (tsp) salt
- 1 Whole bay leaf
- 0.5 Whole star anise
- 1 Pinch ground black pepper, to taste
- 1.5 Cups tomato, minced
- 0.5 Cups heavy cream
Steps
- In a large pot, bring the beef soup bones and water to a boil over medium-high heat. Reduce the heat and let it simmer for 1.5 hours, adding more water as necessary to maintain a 2-quart level. Remove and discard the soup bones, then strain the broth into a fresh pot and return it to the stovetop.
- Add the minced carrots, cubed potatoes, shredded cabbage, minced onions, minced parsley, allspice berries, salt, bay leaf, star anise, and ground black pepper to the broth. Cook until the potatoes are easily pierced with a fork, about 20 minutes.
- Stir in the minced tomatoes and bring the soup back to a boil.
