Ingredients

  • 1 - 3 Pounds (lb) beef chuck roast
  • 0.5 - Cup (c) barley
  • 1 - Whole bay leaf
  • 2 - Tablespoons (tbsp) oil
  • 3 - Medium carrots, minced
  • 3 - Stalks celery, minced
  • 1 - Large onion, minced
  • 1 - 16 Ounces (oz) package frozen mixed vegetables
  • 4 - Cups (c) water
  • 1 - 28 Ounces (oz) can stewed tomatoes, chopped
  • 4 - Cubes beef bouillon cube
  • 1 - Tablespoon (tbsp) white sugar
  • 0.25 - Teaspoon (tsp) black pepper, ground
  • 1 - Pinch salt, to taste
  • 1 - Pinch pepper, to taste

Steps

  1. Heat the oil in a large pot over medium-high heat. Add the beef chuck roast and brown on all sides.
  2. Remove the beef from the pot and set aside. In the same pot, add the minced carrots, celery, and onion. Sauté until the vegetables are tender.
  3. Return the beef to the pot. Add the barley, bay leaf, water, stewed tomatoes, beef bouillon cubes, and sugar. Stir to combine.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the beef is tender.
  5. Add the frozen mixed vegetables, black pepper, salt, and additional pepper to taste. Simmer for another 30 minutes.
  6. Remove the bay leaf before serving. Enjoy your hearty beef barley stew!
