Ingredients
- 1.5 Pounds (lb) beets, grated
- 2 Tablespoons (tbsp) red wine vinegar
- 1 Teaspoon (tsp) white sugar
- 1 Pound (lb) lean beef chuck
- 2 Quarts (qt) water
- 0.5 Pound (lb) bacon
- 1 Tablespoon (tbsp) salt
- 8 Whole black peppercorns
- 6 Sprigs fresh parsley
- 2 Teaspoons (tsp) dried marjoram
- 2 Teaspoons (tsp) dill seed
- 1 Pound (lb) cabbage, shredded
- 2 Whole leeks, sliced
- 1 Cup onion, minced
- 1 Medium carrot, grated
- 2 Pounds (lb) Polish sausage
- 2 Tablespoons (tbsp) dill weed, minced
Steps
- Combine 0.5 cup of the grated beets, red wine vinegar, and sugar in a small bowl. Cover and refrigerate overnight. Refrigerate the remaining beets separately.
- In a Dutch oven, place the beef, water, bacon, salt, peppercorns, parsley sprigs, marjoram, and dill seeds. Bring to a boil, then reduce heat and simmer partially covered over medium heat until the beef is tender, about 2 hours.
- Discard the parsley sprigs. Add 3 cups of the grated beets, cabbage, leeks, onions, carrot, and sausage to the pot. Simmer, covered, over low heat for 30 minutes.
- To serve, remove the beef, bacon, and sausage from the pot and cut them into 2-inch pieces. Return the meats and the reserved beet mixture to the Dutch oven. Sprinkle with chopped dill and serve with sour cream on the side.
