Cooking Time: 45 minutes

Ingredients

  • 4 Cups (cups) chicken stock
  • 1 Whole ham hock
  • 3 Cups (cups) cabbage, shredded
  • 2 Cups (cups) potatoes, sliced
  • 1 Teaspoon (tsp) cream
  • 1 Teaspoon (tsp) unsalted butter
  • 1 Small yellow onion, minced
  • 2 Whole garlic cloves, minced
  • 0.5 Teaspoons (tsp) thyme, dried
  • 0.5 Teaspoons (tsp) black pepper, ground
  • 0.5 Teaspoons (tsp) kosher salt
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 1 Tablespoon (tbsp) fresh parsley, minced

Steps

  1. In a large stockpot, heat the butter over medium heat. Add the minced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes.
  2. Add the chicken stock, ham hock, shredded cabbage, and sliced potatoes to the pot. Stir in the dried thyme, ground black pepper, and kosher salt.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the potatoes are tender.
  4. Carefully remove the ham hock from the pot. Separate the meat from the bone, discarding the bone, and shred the meat. Return the shredded ham to the soup.
  5. Stir in the cream to add a creamy finish to the soup. Adjust seasoning with additional salt and pepper to taste.
  6. Serve hot, garnished with freshly minced parsley for a burst of color and flavor.
