- 5 Medium russet potatoes, peeled
- 2 Medium yellow onions, minced
- 2 Cups diced ham
- 3 Stalks celery, minced
- 1 15.25 Ounces (oz) can whole kernel corn, undrained
- 2 Tablespoons (tbsp) unsalted butter
- 1 Teaspoon (tsp) kosher salt
- 0.5 Teaspoon (tsp) freshly ground black pepper
- 2 Cubes chicken bouillon
- 1 12 Fluid Ounces (fl oz) can evaporated milk
- 1 Cup chicken broth
- 1 Clove garlic, minced
- 1 Cup sharp cheddar cheese, grated
- 1 Teaspoon (tsp) dried thyme
- 1 Teaspoon (tsp) dried sage
- 2 Tablespoons (tbsp) cornstarch
- 2 Tablespoons (tbsp) water
Steps
- In a slow cooker, combine the potatoes, onions, ham, celery, corn, butter, salt, pepper, bouillon cubes, chicken broth, and minced garlic. Stir to mix well.
- Add enough water to cover the ingredients, approximately 4 cups.
- Set the slow cooker to Low and cook for 8 hours, or until the potatoes are tender.
- In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
- Stir the evaporated milk, cheddar cheese, thyme, sage, and cornstarch slurry into the slow cooker.
- Cook for an additional 30 minutes on Low, allowing the chowder to thicken.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh herbs or crispy bacon bits if desired.
