Ingredients

  • 5 Medium russet potatoes, peeled
  • 2 Medium yellow onions, minced
  • 2 Cups diced ham
  • 3 Stalks celery, minced
  • 1 15.25 Ounces (oz) can whole kernel corn, undrained
  • 2 Tablespoons (tbsp) unsalted butter
  • 1 Teaspoon (tsp) kosher salt
  • 0.5 Teaspoon (tsp) freshly ground black pepper
  • 2 Cubes chicken bouillon
  • 1 12 Fluid Ounces (fl oz) can evaporated milk
  • 1 Cup chicken broth
  • 1 Clove garlic, minced
  • 1 Cup sharp cheddar cheese, grated
  • 1 Teaspoon (tsp) dried thyme
  • 1 Teaspoon (tsp) dried sage
  • 2 Tablespoons (tbsp) cornstarch
  • 2 Tablespoons (tbsp) water

Steps

  1. In a slow cooker, combine the potatoes, onions, ham, celery, corn, butter, salt, pepper, bouillon cubes, chicken broth, and minced garlic. Stir to mix well.
  2. Add enough water to cover the ingredients, approximately 4 cups.
  3. Set the slow cooker to Low and cook for 8 hours, or until the potatoes are tender.
  4. In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.
  5. Stir the evaporated milk, cheddar cheese, thyme, sage, and cornstarch slurry into the slow cooker.
  6. Cook for an additional 30 minutes on Low, allowing the chowder to thicken.
  7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Serve hot, garnished with fresh herbs or crispy bacon bits if desired.
