  • 2 Quarts (qt) beef broth
  • 6 Medium carrots, sliced
  • 1 Large yellow onion, minced
  • 4 Stalks celery, sliced
  • 1 Cup barley
  • 0.5 Cup fresh parsley, torn
  • 2 Whole bay leaves
  • 1 Teaspoon (tsp) Italian seasoning
  • 1 Tablespoon (tbsp) Worcestershire sauce

Steps

  1. Heat the vegetable oil in a skillet over medium-high heat. Add the cubed beef and sear until browned on all sides, about 5 minutes. Stir in the minced garlic, salt, and pepper. Transfer the beef mixture to a slow cooker.
  2. Deglaze the skillet by adding a few tablespoons of beef broth, scraping up any browned bits with a wooden spoon. Pour this liquid into the slow cooker.
