  • 2 Pounds (lb) beef chuck, divided
  • 2 Tablespoons (tbsp) olive oil
  • 1 Large onion, minced
  • 2 Whole garlic cloves, minced
  • 2 Tablespoons (tbsp) all-purpose flour
  • 1 Teaspoon (tsp) salt
  • 0.5 Teaspoon (tsp) black pepper
  • 1 Cup Guinness beer
  • 2 Cups beef broth
  • 2 Tablespoons (tbsp) tomato paste
  • 2 Whole carrots, sliced
  • 2 Whole potatoes, peeled
  • 1 Teaspoon (tsp) thyme
  • 1 Whole bay leaf

Steps

  1. Heat olive oil in a large pot over medium heat. Add the beef cubes and brown on all sides. Remove the beef and set aside.
  2. In the same pot, add the minced onion and minced garlic. Sauté until the onion is translucent.
  3. Stir in the flour, salt, and black pepper, and cook for 1 minute.
  4. Gradually add the Guinness beer, scraping up any browned bits from the bottom of the pot.
  5. Return the beef to the pot and add the beef broth, tomato paste, carrots, potatoes, thyme, and bay leaf.
  6. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2.5 to 3 hours, or until the beef is tender.
  7. Remove the bay leaf before serving. Enjoy your Beef and Guinness Stew with mashed potatoes or crusty bread.
