  • 2 Tablespoons (tbsp) olive oil
  • 3 Tablespoons (tbsp) all-purpose flour
  • 2 Pounds (lb) beef chuck, cut into cubes
  • 1 Pound (lb) carrots, peeled and sliced
  • 6 Large potatoes, peeled and diced
  • 1 Whole white onion, sliced
  • 2 Whole garlic cloves, minced
  • 2 Cups beef broth
  • 1 6 Ounces (oz) can tomato paste
  • 1 12 Fluid Ounces (fl oz) Irish stout beer
  • 1 Tablespoon (tbsp) cold water
  • 1 Tablespoon (tbsp) cornstarch

Steps

  1. Heat the olive oil in a large skillet over medium heat. Toss the beef cubes with flour to coat, then fry in the hot oil until browned.
  2. Place the carrots, potatoes, onion, and garlic in a large slow cooker. Place the browned beef on top of the vegetables.
  3. Mix together the beef broth and tomato paste, then pour into the slow cooker along with the beer.
  4. Cover and cook on High for 6 hours or Low for 8 hours.
  5. During the last hour before serving, dissolve the cornstarch in cold water and stir into the broth. Simmer on the High setting for a few minutes to thicken.
