  • 1 15 Ounces (oz) can kidney beans, drained
  • 1 14 Ounces (oz) can vegetable broth
  • 1.5 Quarts (qt) water
  • 3 Tablespoons (tbsp) fresh basil, shredded
  • 2 Tablespoons (tbsp) fresh oregano, shredded
  • 1 Tablespoon (tbsp) salt
  • 2 Cups uncooked elbow macaroni

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the potatoes, carrots, celery, onion, and garlic to the pot. Stir well.
  3. Mix in the tomato paste, kidney beans, vegetable broth, and water.
  4. Season the mixture with basil, oregano, and salt.

  6. Add the uncooked elbow macaroni to the pot.
