  • 1.5 Cups (cups) cooked white rice
  • 1.5 Cups (cups) uncooked green lentils
  • 2 Teaspoons (tsp) curry powder
  • 1 Teaspoon (tsp) turmeric, ground
  • 0.5 Teaspoon (tsp) cumin, ground
  • 0.5 Teaspoon (tsp) coriander, ground
  • 0.5 Teaspoon (tsp) kosher salt
  • 0.25 Teaspoon (tsp) black pepper
  • 1 Tablespoon (tbsp) lemon juice
  • 0.25 Cup (cup) fresh cilantro, torn (for garnish)

Steps

  1. Heat the olive oil in a large stock pot over medium heat. Add the minced onion and minced garlic, sautéing until the onion becomes translucent and fragrant, about 5 minutes.
  2. Add the broccoli florets and minced celery to the pot. Cook and stir for another 5 minutes until the vegetables are tender.
  3. Meanwhile, microwave the peeled baking potato for 5 to 10 minutes until tender. Once cooked, transfer the potato along with the sautéed vegetables to a food processor. Blend until smooth and creamy.
  4. Return the blended mixture to the pot and add the vegetable broth. Bring the mixture to a gentle boil.
  5. Stir in the cooked white rice, uncooked green lentils, curry powder, turmeric, cumin, coriander, kosher salt, and black pepper. Mix well to combine all the flavors.
  6. Reduce the heat to low, cover the pot, and let the soup simmer for about 45 minutes, or until the lentils are soft and fully cooked. Stir occasionally to prevent sticking.
  7. Just before serving, stir in the lemon juice to brighten the flavors.
