Ingredients

  • 2.5 Cups water
  • 2 Whole potatoes, peeled
  • 1 Pinch salt, to taste
  • 1 Medium carrot, minced
  • 1 Stalk celery, minced
  • 0.25 Medium onion, minced
  • 1 Cube beef bouillon
  • 1 Tablespoon olive oil
  • 0.5 Cups frozen mixed vegetables
  • 10.75 Ounces condensed cream of celery soup
  • 0.25 Tablespoon dried parsley
  • 0.5 Teaspoon onion powder
  • 1 Pinch ground black pepper, to taste

Steps

  1. In a large stock pot, bring 2.5 cups of water to a boil. Add the peeled potatoes and a pinch of salt. Cook until the potatoes are tender and soft.
  2. Add the minced carrot, celery, onion, frozen mixed vegetables, olive oil, and beef bouillon cube to the pot. Stir well and continue cooking until all the vegetables are soft.
  3. Stir in the condensed cream of celery soup. Season with dried parsley, onion powder, and a pinch of ground black pepper. If a thinner soup is desired, add an additional 0.5 cup of water.
  4. Heat the soup through, stirring occasionally. Serve hot and enjoy your savory creamy potato-vegetable soup.
