- 1 Cup carrots, minced

- 10 Cups beef stock
- 0.75 Cup barley
- 1 Bay leaf
- 3 Sprigs fresh thyme, minced
- 0.5 Cup red wine
- 2 Cups potatoes, cubed
- 2 Cups cooked beef, cubed
- 1 Teaspoon (tsp) browning sauce (optional)
- 1.5 Cups cabbage, minced
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- In a large pot over medium heat, combine the vegetable oil, onions, celery, carrots, and minced garlic. Sauté for 5 minutes, or until the vegetables are tender.
- Add the beef stock, barley, bay leaf, and minced thyme to the pot. Simmer until the barley is softened but not mushy.
