Ingredients

  • 2 Cups brown lentils
  • 1 Whole onion, minced
  • 2 Whole carrots, julienned
  • 3 Leaves cabbage, torn
  • 4 Tablespoons vegetable oil
  • 1 Ounce package dry onion soup mix, packaged
  • 1 Teaspoon ground cumin
  • 0.5 Teaspoon ground black pepper
  • 0.5 Teaspoon ground cinnamon
  • 0.5 Teaspoon ground allspice
  • 0.25 Teaspoon ground cloves
  • 0.25 Teaspoon ground nutmeg
  • 1 Pinch salt, to taste
  • 1 Whole lemon, zested

Steps

  1. Place the lentils, onion, carrots, and cabbage leaves in a pressure cooker. Cover with 1.5 inches of water and add 4 tablespoons of vegetable oil. Cook for about 10 to 15 minutes. Allow the pressure to reduce before opening the cooker.
  2. Transfer the cooked mixture to a food processor or blender and puree until smooth.
  3. Add the ground cumin, black pepper, cinnamon, allspice, cloves, and nutmeg to the pureed soup.
  4. Transfer the soup to a stock pot and return to heat. As the soup begins to boil, stir in the dry onion soup mix.
  5. Simmer until the soup thickens to your desired consistency.
  6. Just before serving, season the soup to taste with lemon juice and salt. Enjoy!
