  • 2 Large onions, minced

  • 5 Green onions, minced

  • 8 Red potatoes, cubed

  • 1 Cup all-purpose flour, sifted
  • 5 Cups milk
  • 0.75 Cups white wine
  • 0.25 Cups lemon juice
  • 1.5 Pounds smoked salmon, flaked
  • 1.5 Cups frozen corn kernels
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large pot over medium heat, cook the minced bacon until it releases its drippings and becomes crispy. Remove half of the bacon and set aside for garnish.
  2. Add the minced onions and celery to the pot with the remaining bacon and drippings. Sauté until the onions are translucent and the celery is tender.
  3. Stir in the minced carrots, green onions, and parsley. Pour in the water and fish stock. Season with salt, black pepper, and dill. Cover and simmer over low heat for about 15 minutes.
  4. Add the cubed potatoes to the pot and continue to simmer for another 20 minutes, or until the potatoes are tender.
  5. In a separate skillet, melt the butter over medium heat. Stir in the sifted flour to create a roux, cooking until it turns a light brown. Gradually whisk in a small amount of milk to thin the roux, then add it to the pot with the vegetables.
  6. Pour the remaining milk into the pot, stirring constantly until the chowder thickens slightly.
  7. If using, stir in the white wine. Add the lemon juice, flaked smoked salmon, and corn kernels. Cook over medium heat until the chowder is hot but not boiling.
  8. Taste and adjust seasoning with additional salt and pepper if needed.
