Ingredients
- 1 Cup dried navy beans, soaked overnight
- 2 Tablespoons olive oil
- 1 Medium onion, chopped
- 2 Carrots, diced
- 2 Celery stalks, diced
- 3 Cloves garlic, minced
- 1 Teaspoon dried thyme
- 1 Teaspoon dried rosemary
- 1 Bay leaf
- 6 Cups vegetable broth
- Salt and pepper, to taste
- 2 Tablespoons fresh parsley, chopped
Steps
- Drain and rinse the soaked navy beans.
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5 minutes.
- Stir in the garlic, thyme, rosemary, and bay leaf, and cook for an additional minute until fragrant.
- Add the navy beans and vegetable broth to the pot. Bring to a boil, then reduce the heat to low and simmer, covered, for about 1 hour or until the beans are tender.
- Remove the bay leaf and season the soup with salt and pepper to taste.
- Stir in the fresh parsley just before serving.
