Serving Size: 8
Cooking Time: 70 minutes
Ingredients
- 2 Tablespoons (tbsp) butter
- 1 Large Spanish onion, minced
- 6 Cups reduced-fat chicken broth
- 5 Large carrots, peeled and sliced
- 3 Small potatoes, peeled and sliced
- 1 Teaspoon (tsp) herbes de Provence
- 1 Teaspoon (tsp) dried thyme
- 1 Whole bay leaf
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 0.25 Cups heavy cream
- 2 Tablespoons (tbsp) cream cheese, softened
- 4 Tablespoons (tbsp) heavy cream, [for garnish]
- 4 Whole green onions, sliced
Steps
- In a large pot, melt the butter over low heat. Once the butter begins to foam, add the minced onion. Cook until the onion turns translucent, about 3 to 4 minutes.
- Add the chicken broth, sliced carrots, and potatoes to the pot. Stir in the herbes de Provence, thyme, and bay leaf. Season with salt and pepper to taste.
- Increase the heat to medium-high and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer until the potatoes are tender, approximately 30 minutes.
- Remove the bay leaf. Carefully pour the soup into a blender, filling the pitcher no more than halfway. Secure the lid with a folded kitchen towel. Blend in batches until the soup is smooth and creamy.
- Return the pureed soup to the pot. Stir in the heavy cream and cream cheese until fully incorporated and heated through. Adjust seasoning with additional salt and pepper if needed.
- Serve the soup in bowls, garnishing each with a drizzle of heavy cream and a sprinkle of sliced green onions for a fresh finish.
