  • 1.5 Cups onion, minced

  • 1 Cup carrots, minced

  • 10 Cups beef stock
  • 0.75 Cup barley
  • 1 Leaf bay
  • 3 Sprigs fresh thyme, minced
  • 0.5 Cup red wine
  • 2 Cups potatoes, cubed
  • 2 Cups beef, diced
  • 1 Teaspoon (tsp) browning sauce (Optional)
  • 1.5 Cups cabbage, shredded
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large pot over medium heat, combine the vegetable oil, onions, celery, carrots, and minced garlic. Sauté for 5 minutes, or until the vegetables are tender.
  2. Add the beef stock, barley, bay leaf, and minced thyme to the pot. Simmer until the barley is softened but not mushy.
