  • 7 Ounces (oz) smoked sausage, sliced
  • 2 Pounds (lb) red potatoes, minced
  • 2 Whole garlic cloves, minced
  • 3 Cups frozen corn kernels
  • 0.25 Cups parsley, torn
  • 0.5 Tablespoons (tbsp) liquid shrimp and crab boil
  • 2 Teaspoons (tsp) seafood seasoning
  • 4 Cups chicken broth
  • 1 Pound (lb) medium raw shrimp, peeled
  • 1 Whole lemon, sliced

Steps

  1. In a multi-functional pressure cooker (such as Instant Pot®), combine olive oil, minced onion, and sliced smoked sausage. Select the Sauté function and cook for 5 minutes. Turn the pot off.
  2. Add the minced potatoes, minced garlic, corn, torn parsley, liquid shrimp boil, seafood seasoning, and chicken broth. Close and lock the lid. Select high pressure according to the manufacturer’s instructions and set the manual timer for 20 minutes. Allow 20 minutes for pressure to build.
  3. Carefully release the pressure using the quick-release method as per the manufacturer’s instructions, which takes about 5 minutes. Unlock and remove the lid. Stir in the peeled shrimp, replace the lid, and let the soup stand for 10 minutes.
