Ingredients

  • 1 Tablespoon (tbsp) vegetable oil
  • 1 Medium onion, minced
  • 1 Clove garlic, minced
  • 2 Medium carrots, minced
  • 2 Teaspoons (tsp) chili powder
  • 1 Teaspoon (tsp) cumin, ground
  • 4 Cups vegetable stock
  • 2 15 Ounces (oz) black beans, drained
  • 1 8.75 Ounces (oz) whole kernel corn
  • 0.25 Teaspoon (tsp) black pepper, ground
  • 1 14.5 Ounces (oz) stewed tomatoes

Steps

  1. In a large saucepan, heat the vegetable oil over medium heat. Add the minced onion, garlic, and carrots. Cook, stirring occasionally, for about 5 minutes or until the onion is softened.
  2. Stir in the chili powder and ground cumin and cook for an additional minute.
  3. Add the vegetable stock, one can of black beans, corn, and ground black pepper to the saucepan. Bring the mixture to a boil.
  4. Meanwhile, in a food processor or blender, puree the stewed tomatoes with the remaining can of black beans until smooth.
  5. Add the pureed mixture to the saucepan. Reduce the heat, cover, and let the soup simmer for 10 to 15 minutes, or until the carrots are tender.
  6. Serve hot and enjoy your Spicy Black Bean Vegetable Soup!
