- 1 Tablespoon (tbsp) vegetable oil
- 1 Medium onion, minced
- 1 Clove garlic, minced
- 2 Medium carrots, minced
- 2 Teaspoons (tsp) chili powder
- 1 Teaspoon (tsp) cumin, ground
- 4 Cups vegetable stock
- 2 15 Ounces (oz) black beans, drained
- 1 8.75 Ounces (oz) whole kernel corn
- 0.25 Teaspoon (tsp) black pepper, ground
- 1 14.5 Ounces (oz) stewed tomatoes
Steps
- In a large saucepan, heat the vegetable oil over medium heat. Add the minced onion, garlic, and carrots. Cook, stirring occasionally, for about 5 minutes or until the onion is softened.
- Stir in the chili powder and ground cumin and cook for an additional minute.
- Add the vegetable stock, one can of black beans, corn, and ground black pepper to the saucepan. Bring the mixture to a boil.
- Meanwhile, in a food processor or blender, puree the stewed tomatoes with the remaining can of black beans until smooth.
- Add the pureed mixture to the saucepan. Reduce the heat, cover, and let the soup simmer for 10 to 15 minutes, or until the carrots are tender.
