- 2 Ears fresh corn, divided
- 1 Cup dry white wine
- 2 Cups water
- 1 Tablespoon (tbsp) olive oil
- 1 Red onion, minced
- 2 Cloves garlic, minced
- 1 Yellow bell pepper, minced
- 1 Red bell pepper, minced
- 0.5 Small jalapeno pepper, minced
- 1 Quart soy milk
- 2 Tablespoons (tbsp) fresh oregano, minced
- 0.5 Cup chipotle salsa
- 3 Tablespoons (tbsp) cornstarch
- 0.33 Cup cool water
- 2 Tablespoons (tbsp) honey
- 1 Tablespoon (tbsp) soy sauce
- 1 Teaspoon (tsp) orange zest, grated
- 1 Pinch garlic powder, to taste
- 1 Pinch salt, to taste
- 1 Pinch cracked black pepper, to taste
Steps
- In a large pot, combine the frozen shoepeg corn, fresh corn kernels, white wine, and water. Bring to a boil over high heat, then reduce the heat to medium-low. Cover and simmer for 20 minutes to allow the flavors to meld.
- While the corn simmers, heat olive oil in a large skillet over medium heat. Add the minced red onion, minced garlic, minced yellow bell pepper, minced red bell pepper, and minced jalapeno. Sauté until the vegetables are softened and the onion is translucent, about 10 minutes.
- Transfer the sautéed vegetable mixture to the pot with the corn. Stir in the soy milk, fresh oregano, and chipotle salsa. Bring the soup back to a simmer over medium-high heat, then reduce the heat to medium-low. Simmer uncovered for 10 minutes.
- In a small bowl, dissolve the cornstarch in 0.33 cups of cool water. Gradually stir the cornstarch mixture into the simmering soup to thicken it. Add the honey, soy sauce, orange zest, and garlic powder. Continue to simmer for another 10 minutes, stirring frequently.
- Remove the pot from heat. Season the chowder with salt and cracked black pepper to taste. Serve hot, garnished with grated Colby or Parmesan cheese if desired, or refrigerate overnight to enhance the flavors. Enjoy your Zesty Chipotle Corn Chowder!
