Cooking Time: 30 minutes
Ingredients
- 1 Spray cooking spray
- 1.5 Tablespoons (tbsp) anise seeds, ground
- 3.5 Cups (cups) all-purpose flour
- 1 Teaspoon (tsp) baking powder
- 2 Cups (cups) sugar
- 4 Whole eggs
- 0.5 Teaspoon (tsp) vanilla extract
- 0.25 Cup (cup) confectioners' sugar, sifted
Steps
- Prepare 4 cookie sheets by spraying them with cooking spray and sprinkling with ground anise seeds. Set aside.
- In a large bowl, mix together the all-purpose flour and baking powder until well blended.
- In a separate large bowl, combine sugar, eggs, and vanilla extract. Beat with an electric mixer until the mixture is light and frothy, about 5 to 8 minutes.
- Gradually stir the flour mixture into the egg mixture to form a thick dough.
- Roll out the dough on a lightly floured surface to a thickness of 1/4 inch. Lightly sift confectioners' sugar over the dough.
- Press springerle molds firmly and evenly onto the dough to imprint the design. Use a small knife to cut around each cookie and place them 2 inches apart on the prepared cookie sheets.
- Cover the cookies with a lightweight cotton cloth and allow them to dry for 8 hours or overnight.
- Preheat the oven to 250 degrees F (120 degrees C).
- Bake the cookies in the preheated oven until the tops are pale brown and the cookies are set, about 25 to 30 minutes.
- Transfer the cookies to a wire rack to cool completely. Store in an airtight container.
