Ingredients

  • 2 Tablespoons (tbsp) extra-virgin olive oil
  • 2 Teaspoons (tsp) garlic, minced
  • 10 Ounces (oz) fresh spinach, drained
  • 4 Skinless, boneless chicken breast halves
  • 7.5 Ounces (oz) ricotta cheese
  • 0.67 Cups Parmesan cheese, grated
  • 0.5 Teaspoons (tsp) garlic salt
  • 0.5 Teaspoons (tsp) onion powder
  • 2 Teaspoons (tsp) Italian seasoning
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 8 Slices thick bacon

Steps

  1. Preheat your oven to 350°F (175°C). Lightly oil a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and cook until it begins to brown, about 30 seconds. Stir in the spinach and cook until wilted. Transfer to a bowl and let cool.
  3. Slice each chicken breast horizontally to within 1/2 inch of one long edge, then open like a book. Place between two pieces of plastic wrap and pound to 1/4 inch thickness.
  4. Mix ricotta cheese, Parmesan cheese, Italian seasoning, garlic salt, and onion powder into the cooled spinach. Divide the mixture among the chicken breasts, roll each into an oblong shape, and season with salt and pepper. Wrap each with 2 strips of bacon and secure with toothpicks.
  5. Place the wrapped chicken in the prepared baking dish. Bake in the preheated oven until the bacon is crispy and the chicken is cooked through, about 45 to 60 minutes.
  6. Let the chicken rest for 5 to 10 minutes before removing toothpicks and serving. Enjoy your savory creation!
