- 8 Slices bacon
- 6 Ounces (oz) cream cheese
- 4 Green onions, minced
- 0.25 Cups red bell pepper, minced
- 1 Teaspoon (tsp) garlic powder
- 1 Teaspoon (tsp) kosher salt
- 0.5 Teaspoon (tsp) black pepper, ground
- 4 Skinless, boneless chicken breast halves
Steps
- Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a small baking dish with olive oil or non-stick spray.
- In a large, deep skillet, cook the bacon over medium-high heat for about 3 minutes until the grease has mostly rendered, but the bacon remains soft. Remove the bacon and pat dry with paper towels. Set aside.
- In a medium bowl, combine the softened cream cheese, minced green onions, minced red bell pepper, garlic powder, salt, and ground black pepper. Mix until well combined.
- Butterfly each chicken breast by slicing it horizontally without cutting all the way through. Open the breast like a book and evenly spread the cream cheese mixture inside. Fold the chicken breast back over to enclose the filling.
- Wrap each stuffed chicken breast with 2 slices of the pre-cooked bacon, securing with toothpicks if necessary.
- Place the wrapped chicken breasts in the prepared baking dish. Bake in the preheated oven for 30 to 35 minutes, or until the chicken is cooked through and no longer pink in the center. The internal temperature should reach 165 degrees F (74 degrees C).
