Cooking Time: 30 minutes

Ingredients

  • 0.5 Cups cubed potatoes
  • 0.5 Cups onion, minced
  • 0.5 Cups carrot, minced
  • 1 15 Ounces (oz) can kidney beans, drained
  • 6 Tablespoons (tbsp) soy sauce
  • 1 Whole bay leaf
  • 6 Cups water
  • 1 Cups fresh green beans, sliced
  • 0.75 Cups fresh corn kernels
  • 0.25 Cups fresh basil, torn
  • 0.33 Cups tomato puree
  • 3 Cloves garlic, minced
  • 0.33 Cups olive oil
  • 0.33 Cups Parmesan cheese, grated
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. In a large pot over high heat, combine the cubed potatoes, minced onion, minced carrot, drained kidney beans, soy sauce, bay leaf, and water. Bring the mixture to a boil.
  2. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the vegetables are tender. Ensure the vegetables are covered with water, adding more if necessary.
  3. After 20 minutes, add the sliced fresh green beans and fresh corn kernels to the pot. Simmer for an additional 5 minutes until the green beans are tender yet crisp.
  4. While the soup is simmering, prepare the basil sauce. In a blender or food processor, combine the torn fresh basil, tomato puree, minced garlic, olive oil, grated Parmesan cheese, and a pinch of salt and pepper. Blend until the mixture is smooth and well combined.
  5. Once the vegetables are cooked, remove the bay leaf from the soup. Stir in the prepared basil sauce, ensuring it is evenly distributed throughout the soup.
  6. Taste and adjust the seasoning with additional salt and pepper if needed. Serve hot, garnished with extra Parmesan cheese and fresh basil if desired.
