Ingredients
- 1 Small onion, minced
- 1 Tablespoon (tbsp) vegetable oil
- 14.5 Ounces (oz) can fire-roasted diced tomatoes
- 15 Ounces (oz) can black beans, drained
- 0.5 Teaspoons (tsp) dried oregano
- 0.5 Teaspoons (tsp) garlic powder
- 1 Cup long-grain white rice
- 2 Cups vegetable broth
- 0.5 Teaspoons (tsp) cumin, ground
- 0.5 Teaspoons (tsp) chili powder
- 0.5 Teaspoons (tsp) kosher salt
- 0.25 Teaspoons (tsp) black pepper, ground
- 1 Tablespoon (tbsp) fresh cilantro, minced (optional)
- 1 Lime, sliced (optional)
Steps
- In a large saucepan, heat the vegetable oil over medium heat. Add the minced onion and sauté until tender and translucent, about 3-4 minutes. Avoid browning the onion to maintain a sweet flavor.
- Stir in the fire-roasted diced tomatoes, drained black beans, dried oregano, garlic powder, ground cumin, chili powder, kosher salt, and black pepper. Cook for 2 minutes to allow the spices to bloom.
- Add the rice to the saucepan and stir to coat the grains with the tomato and spice mixture. Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15 minutes, or until the rice is tender and has absorbed the liquid.
- Remove the saucepan from the heat and let it stand, covered, for an additional 5 minutes to allow the flavors to meld.
- Fluff the rice with a fork and stir in the minced cilantro, if using. Serve the rice medley with lime slices on the side for an added burst of freshness.
