  • 4 Tablespoons (tbsp) butter
  • 0.25 Cups red onion, minced
  • 2 Cloves garlic, minced
  • 0.33 Cups all-purpose flour
  • 0.5 Teaspoons (tsp) salt
  • 0.25 Teaspoons (tsp) pepper
  • 1 Cups 2% milk
  • 1 Cups buttermilk
  • 1 Cups Parmesan cheese, divided
  • 14 Small potatoes, peeled

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  2. Melt 1 tablespoon of butter in a saucepan over medium heat. Add the minced onion and garlic; cook and stir until the onion is translucent, about 5 minutes.
  3. Stir in the remaining 3 tablespoons of butter until melted. Sprinkle the flour, salt, and pepper over the onion mixture; cook and stir until the mixture bubbles and thickens, about 2 minutes.
  4. Gradually whisk in the milk and buttermilk, and return the mixture to a boil. Stir in 3/4 cup of the Parmesan cheese; cook until melted and smooth, about 2 minutes.
  5. Arrange the cubed potatoes over the bottom of the prepared baking dish. Pour the sauce over the potatoes, and stir until evenly coated.
  6. Bake in the preheated oven for 1 hour, stirring halfway through. Stir once more, top with the remaining 1/4 cup of Parmesan cheese, and bake until the cheese is melted and golden brown, about 20 more minutes.
