Ingredients

  • 2 Cups all-purpose flour
  • 1.5 Teaspoons (tsp) baking powder
  • 0.5 Teaspoons (tsp) salt
  • 1 Cup unsalted butter, melted
  • 2 Cups light brown sugar, packed
  • 2 Teaspoons (tsp) vanilla extract
  • 3 Large eggs
  • 1 Cup walnuts, chopped

Coffee Frosting

  • 2 Teaspoons (tsp) instant coffee granules
  • 2 Tablespoons (tbsp) water
  • 3 Cups confectioners' sugar, sifted
  • 0.5 Cup unsalted butter, softened

Steps

  1. Preheat the oven to 350 degrees F (180 degrees C). Grease a 7x11-inch baking pan.
  2. Sift the flour, baking powder, and salt together in a bowl.
  3. For the bars: Beat the brown sugar and melted butter until well combined. Beat in the eggs and vanilla, then gradually stir in the flour mixture. Fold in the walnuts until well combined. Spread the batter into the prepared pan.
  4. Bake in the preheated oven until light golden brown, about 30 to 35 minutes. Cool in the pan for 10 minutes, then turn out of the pan and finish cooling on a wire rack for 15 to 20 minutes.
  5. Meanwhile, make the frosting: Dissolve the coffee in water in a small bowl.
  6. Beat the confectioners' sugar and butter in a mixing bowl with an electric mixer until light and fluffy. Beat in the coffee mixture until incorporated.
  7. Spread the frosting over the cooled bars. Let the frosting set before cutting into 36 squares.

Enjoy your delicious butterscotch brownies!
