Ingredients

  • 1.5 Pounds (lb) fresh green beans, rinsed
  • 3 Ounces (oz) pancetta, minced
  • 1 Whole shallot, sliced
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste

Steps

  1. Bring a large pot of lightly salted water to a boil. Add the green beans and boil for 3 to 4 minutes until just tender.
  2. Drain the beans and immediately plunge them into ice water. Allow them to sit in the ice water until cold, then drain well and set aside.
  3. In a large skillet over medium-high heat, cook the pancetta until crispy, then set aside.
  4. Reduce the heat to medium, stir the shallots into the pancetta fat, and cook gently until the shallots turn dark golden brown, about 10 minutes.
  5. Add the pancetta and green beans to the skillet; toss and cook until warmed through, about 2 minutes.
  6. Season to taste with salt and pepper before serving.
