Ingredients

  • 1.5 Pounds (lb) fresh green beans, drained
  • 3 Ounces (oz) pancetta, minced
  • 1 Whole shallot, sliced
  • 1 Pinch salt, to taste
  • 1 Pinch black pepper, to taste

Steps

  1. Bring a large pot of lightly salted water to a boil. Add the green beans and boil for 3 to 4 minutes until just tender. Drain the beans and immediately plunge them into ice water. Allow them to sit in the ice water until cold, then drain well and set aside.
  2. In a large skillet over medium-high heat, cook the pancetta until crispy. Remove and set aside.
  3. Reduce the heat to medium and stir the shallots into the pancetta fat. Cook gently until the shallots turn dark golden brown, about 10 minutes.
  4. Add the pancetta and green beans back into the skillet. Toss and cook until warmed through, about 2 minutes.
