Ingredients

  • 1 Pound (lb) spaghetti, divided
  • 3 10.75 Ounces (oz) cans condensed cream of mushroom soup, packaged
  • 12 Ounces (oz) Cheddar cheese, shredded
  • 6 Cups chicken breast meat, shredded
  • 1 Pound (lb) mushrooms, sautéed
  • 1 4 Ounces (oz) jar pimento peppers, drained
  • 2 Cups chicken broth

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of salted water to a boil. Add the divided spaghetti and cook for 8 to 10 minutes or until al dente. Drain and set aside.
  3. In a large saucepan, heat the packaged condensed cream of mushroom soup over low heat.
  4. Add the shredded Cheddar cheese, reserving some for topping, and stir until melted and combined.
  5. Stir in the shredded chicken, sautéed mushrooms, pimento peppers, and cooked spaghetti.
  6. Gradually add enough chicken broth to achieve a slightly 'sloppy' consistency, mixing well.
  7. Pour the mixture into a 9x13 inch baking dish.
  8. Sprinkle the reserved shredded Cheddar cheese on top.
  9. Bake in the preheated oven for 25 to 35 minutes or until the top is bubbly and golden.
