Ingredients

- 1 Teaspoon (tsp) garlic, minced
- 0.33 Cups onion, minced
- 1 14.5 Ounces (oz) can diced tomatoes with juice
- 0.5 Teaspoons (tsp) sugar
- 0.25 Cups heavy cream
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 0.33 Cups fine dry bread crumbs
- 2 Tablespoons (tbsp) Parmesan cheese, grated
- 0.5 Teaspoons (tsp) dried oregano
- 1 Large egg, whisked
- 2 Tablespoons (tbsp) milk
- 3 5 Ounces (oz) skinless, boneless chicken breast halves, tenderized
- 3 Tablespoons (tbsp) olive oil
- 0.75 Cups Mozzarella cheese, shredded
- 1 Tablespoon (tbsp) Parmesan cheese, grated
Steps
- Melt the butter in a saucepan over medium heat. Add the minced garlic and onion, cooking until the onion is translucent, about 2 minutes.
- Pour in the diced tomatoes and sugar. Increase the heat to medium-high and bring to a simmer. Reduce the heat to medium-low and simmer for 10 minutes, stirring occasionally.
- Stir in the heavy cream and season with salt and pepper. Simmer for an additional 3 minutes. Lower the heat and keep the sauce warm.
- In a bowl, combine the bread crumbs, 2 tablespoons of Parmesan cheese, and dried oregano. In another bowl, whisk together the egg and milk.
- Dip the chicken breasts into the egg mixture, then coat with the breadcrumb mixture, shaking off any excess.
- Heat the olive oil in a large skillet over medium heat. Cook the chicken breasts on both sides until they reach an internal temperature of 160°F (70°C) and the crust is golden brown, about 10 minutes.
