Ingredients

  • 2 Tablespoons (tbsp) margarine
  • 1 Cup celery, minced
  • 1 Cup onion, minced
  • 2 14.5 Ounces (oz) chicken broth
  • 3 Cups potatoes, peeled
  • 1 15 Ounces (oz) whole kernel corn, packaged
  • 1 4 Ounces (oz) diced green chiles, packaged
  • 1 2.5 Ounces (oz) package country style gravy mix, packaged
  • 2 Cups milk
  • 1 Cup Mexican-style processed cheese food, shredded

Steps

  1. In a large saucepan, melt the margarine over medium-high heat. Add the celery and onion, cooking and stirring until tender, about 5 minutes.
  2. Add the chicken broth to the saucepan and bring to a boil. Add the potatoes and cook over low heat for 20 to 25 minutes, or until the potatoes are soft, stirring occasionally.
  3. Stir in the corn and diced green chiles, and return the mixture to a boil.
  4. Dissolve the gravy mix in the milk, then stir it into the boiling mixture.
  5. Add the shredded cheese and cook over low heat, stirring until the cheese is melted and the chowder is creamy.
