Ingredients
- 2 Tablespoons (tbsp) vegetable oil
- 1 Pound (lb) beef, ground
- 1 Large onion, minced
- 5 Cloves garlic, minced
- 1 Whole red bell pepper, minced
- 1 Ounce (oz) package taco seasoning, packaged
- 8 Ounces (oz) jar taco sauce, packaged
- 4 16 Ounces (oz) packages egg roll wrappers, packaged
- 1 Pound (lb) processed cheese food (i.e., Velveeta®), sliced
- 2 Whole egg whites, whisked
- 2 Quarts (qt) canola oil
Steps
- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add 1 pound of ground beef and cook until browned and no longer pink.
- Reduce heat to medium and mix in 1 minced large onion, 5 minced garlic cloves, and 1 minced red bell pepper. Cook until vegetables are softened, about 5 minutes.
- Stir in 1 package of taco seasoning and 1 jar of taco sauce. Cook and stir until the sauce begins to bubble, about 5 minutes more.
- On a clean, flat surface, place 1 egg roll wrapper with a corner facing you. Add 1 tablespoon of the meat mixture in the center and top with a slice of cheese.
- Fold the corner closest to you over the filling and roll the wrapper 1-1/2 times. Fold in the two opposite side corners and continue rolling, tucking them in.
- Dip two fingers in the whisked egg whites and brush the remaining corner to seal. Repeat with a second egg roll wrapper. Let rest briefly to dry.
- If not serving immediately, preheat the oven to 325°F (165°C) and line a dish with paper towels.
- Pour 2 quarts of canola oil into a large wok over medium-high heat. When the oil shimmers, carefully add 2-3 egg rolls. Cook until golden brown, 30 seconds to 1 minute.
- Remove with a slotted spoon and place on the prepared dish. Keep warm in the oven for up to 15 minutes. Repeat with remaining egg rolls.
