  • 1.5 Pounds (lb) beef roast
  • 32 Ounces (oz) beef broth
  • 2 Cups water
  • 0.25 Cups polenta
  • 8 Whole red potatoes, divided
  • 1 Whole onion, divided
  • 1.5 Pounds (lb) pumpkin, divided
  • 2 Whole ears corn, divided
  • 1 Whole carrot, sliced
  • 1 Small red bell pepper, seeded
  • 1 Stalk celery, sliced
  • 1 Whole leek, sliced
  • 1 Teaspoon (tsp) fresh oregano, minced
  • 0.25 Teaspoon (tsp) paprika, ground
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste
  • 0.5 Cups cilantro leaves, torn

Steps

  1. Cut the beef roast into 6 large chunks. Place the beef into a large saucepan and add the beef broth and water. Bring to a boil over high heat, then reduce to medium, cover, and simmer until nearly tender, about 1 to 1.5 hours.
  2. Stir in the polenta, potatoes, and onion. Cover and simmer for 15 minutes.
  3. Cut the pumpkin into 6 serving-sized pieces and add to the stew along with the corn, carrot, bell pepper, celery, and leek. Simmer until the vegetables are tender, adding more water if needed to barely cover.
  4. Stir in the oregano and paprika during the last 5 minutes of cooking.
  5. Season to taste with salt and pepper. Ladle into serving bowls and sprinkle with chopped cilantro.
