- 1.5 Teaspoons (tsp) Mexican-style chili powder
- 1 Teaspoon (tsp) guajillo chile powder
- 0.5 Teaspoon (tsp) salt
- 0.5 Teaspoon (tsp) ground black pepper
- 1 Tablespoon (tbsp) Parmesan cheese, grated
- 1 Whole egg
- 1 Tablespoon (tbsp) olive oil
- 0.5 Whole onion, minced
- 1 Small jalapeno pepper, minced
- 0.5 Whole Anaheim chile pepper, minced
- 2 Whole tostada shells, crushed
- 0.25 Cups bread crumbs
- 16 Ounces (oz) package spaghetti
- 14.5 Ounces (oz) can diced tomatoes
- 0.5 Whole onion, diced
- 1 Whole chipotle chile in adobo sauce, minced
- 24 Ounces (oz) jar spaghetti sauce
- 1 Tablespoon (tbsp) taco seasoning mix
Steps
- Preheat your oven to 350°F (175°C). Line a baking sheet with aluminum foil and lightly grease it with cooking spray.
- In a large mixing bowl, combine the ground turkey, Mexican chili powder, guajillo chile powder, salt, ground black pepper, and Parmesan cheese. Add the egg, olive oil, minced onion, jalapeno, and Anaheim pepper. Mix thoroughly with your hands until well combined.
- Sprinkle the tostada crumbs and bread crumbs over the mixture and mix again until the crumbs are fully incorporated. Shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for about 40 minutes, turning them over after 20 minutes to ensure even cooking. The meatballs should be lightly browned and no longer pink in the center.
- While the meatballs are baking, bring a large pot of lightly salted water to a rolling boil. Add the spaghetti and cook until al dente, about 12 minutes. Drain the pasta well.
- In a large saucepan, combine the diced tomatoes, diced onion, minced chipotle chile, spaghetti sauce, and taco seasoning. Bring to a simmer over medium-high heat, then reduce the heat to medium-low and simmer for 10 to 15 minutes until the onion is tender.
- Once the meatballs are done, add them to the sauce and cook for an additional 5 minutes to allow the flavors to meld.
- Serve the meatballs and sauce over the cooked spaghetti. Enjoy your Mexican-Italian fusion meal!
