Ingredients

  • 3 Pounds (lb) whole chicken, divided
  • 2 Teaspoons (tsp) fresh ginger root, minced
  • 2 Teaspoons (tsp) garlic, minced
  • 1 Bunch fresh cilantro
  • 1 Teaspoon (tsp) cumin, ground
  • 1 Whole jalapeno chile pepper, minced
  • 2 Tablespoons (tbsp) lemon juice
  • 0.25 Cups cashews, ground
  • 1 Cup heavy whipping cream
  • 1 Pinch salt, to taste

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. Remove and discard the skin from the chicken pieces. Wash and pat them dry. Combine the minced garlic and ginger, then rub this mixture over the chicken pieces. Place the chicken in a 9x13 inch baking dish, cover with foil, and set aside.
  3. In a blender, combine the cilantro, ground cumin, minced jalapeno, and lemon juice. Puree until smooth, adding a little water if necessary to achieve a smooth consistency. Set this cilantro chutney aside.
  4. In a small bowl, mix the ground cashews with the heavy cream until well combined. Pour this mixture over the chicken in the baking dish.
  5. Bake the chicken, covered, in the preheated oven for 30 minutes. Then, remove the foil and bake uncovered for an additional 15 minutes, allowing the sauce to thicken slightly.
  6. Remove the chicken from the oven and mix the thickened sauce in the dish with the reserved cilantro chutney. Stir well to combine.
  7. Serve the chicken hot, drizzled with the cilantro chutney sauce. Enjoy with bread and rice for a complete meal.
