Ingredients
- 2 10 Inch (in) flour tortillas
- 2 Tablespoons (tbsp) vegetable oil
- 1 Small onion, minced
- 0.5 Red bell pepper, minced
- 1 Teaspoon (tsp) garlic, minced
- 1 Teaspoon (tsp) jalapeño peppers, minced
- 15 Ounces (oz) black beans, drained
- 3 Ounces (oz) cream cheese, cubed
- 0.5 Teaspoon (tsp) salt
- 2 Tablespoons (tbsp) fresh cilantro, minced
Steps
- Preheat the oven to 350 degrees F (175 degrees C). Wrap the tortillas in foil.
- Bake the wrapped tortillas in the preheated oven until heated through, about 15 minutes.
- Meanwhile, heat the vegetable oil in a 10-inch skillet over medium heat. Add the minced onion, minced red bell pepper, minced garlic, and minced jalapeño peppers. Cook and stir for 2 minutes.
- Stir in the drained black beans and cook until heated through, about 3 minutes.
- Add the cubed cream cheese and salt to the skillet. Cook, stirring occasionally, for 2 minutes until the cream cheese is melted and well combined. Stir in the minced fresh cilantro.
- Spoon the filling in a line across the middle of each tortilla. Fold the opposing edges of the tortilla to overlap the filling, then roll one of the opposing edges around the filling to create a burrito.
