Ingredients

  • Streusel
  • 0.5 Cups all-purpose flour
  • 0.5 Cups granulated sugar
  • 0.25 Cups old-fashioned rolled oats
  • 0.25 Teaspoons table salt
  • 0.25 Teaspoons ground cinnamon
  • 6 Tablespoons unsalted butter, cubed
  • Cake Batter
  • 1 Pinch cooking spray, to taste
  • 0.5 Cups unsalted butter
  • 0.25 Cups granulated sugar
  • 0.25 Cups packed light brown sugar
  • 2 Large eggs, at room temperature
  • 2 Teaspoons vanilla extract
  • 1.25 Cups all-purpose flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon ground cinnamon
  • 0.25 Teaspoons table salt
  • 3 Tablespoons whole milk
  • 2 Large Granny Smith apples, peeled and sliced
  • Cinnamon Glaze
  • 0.5 Cups powdered sugar
  • 1 Teaspoon ground cinnamon
  • 2 Teaspoons whole milk

Steps

  1. Combine 0.5 cups flour, 0.5 cups sugar, oats, 0.25 teaspoon salt, and 0.25 teaspoon cinnamon in a bowl for the streusel. Cut in the butter using a fork or pastry cutter until the mixture resembles coarse bread crumbs. Chill in the refrigerator until ready to use.
  2. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray.
  3. In a medium bowl, beat 0.5 cups butter, 0.25 cups granulated sugar, and brown sugar at medium speed until light and fluffy, about 3 to 4 minutes. Beat in the eggs, one at a time, on low speed until just blended. Add the vanilla extract.
  4. In a small bowl, combine 1.25 cups flour, baking powder, 1 teaspoon cinnamon, and 0.25 teaspoon salt. Add the dry ingredients to the wet mixture and mix on low speed until fully incorporated, about 1 to 2 minutes. Add 3 tablespoons milk and beat on low speed until combined, about 45 seconds.
  5. Spread the cake batter evenly in the prepared pan.
  6. Arrange the apple slices evenly on top of the batter, overlapping as needed.
  7. Sprinkle the apples with the prepared streusel.
  8. Bake in the preheated oven until a toothpick inserted into the center comes out clean and the streusel is golden brown and crisp, about 40 to 50 minutes. Let the cake cool in the pan on a wire rack for 10 minutes. Remove from the pan and let cool completely on the wire rack for 30 to 45 minutes.
  9. In a small bowl, whisk together powdered sugar, 1 teaspoon cinnamon, and 2 teaspoons milk until smooth.
  10. Drizzle the glaze over the cake before serving. Enjoy!
