Ingredients

  • 1.25 Cups matzo cake meal, sifted
  • 1 Teaspoon (tsp) cream of tartar
  • 0.5 Teaspoon (tsp) baking soda
  • 0.25 Teaspoon (tsp) salt
  • 0.25 Cup butter, softened
  • 1 Cup white sugar
  • 1 Banana, mashed
  • 1 Large egg
  • 0.5 Cup milk
  • 0.33 Cup brown sugar
  • 2 Tablespoons (tbsp) ground cinnamon

Steps

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  2. Sift together the matzo cake meal, cream of tartar, baking soda, and salt in a medium bowl. Set aside.
  3. In a large bowl, beat the softened butter with an electric mixer until creamy. Gradually add the white sugar, beating until the mixture is fluffy.
  4. Beat in the mashed banana and egg until well incorporated.
  5. Add the matzo meal mixture in three batches, alternating with the milk, and beat the batter briefly after each addition.
  6. Spread the batter evenly in the prepared baking pan.
  7. Sprinkle the brown sugar and ground cinnamon evenly over the top of the batter.
  8. Bake in the preheated oven for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool slightly before serving. Enjoy warm or cold!
