  • 0.5 Cup pecans, minced
  • 2 Cups all-purpose flour
  • 1 Teaspoon baking powder
  • 1 Teaspoon baking soda
  • 0.5 Teaspoon salt
  • 0.5 Cup butter, room temperature
  • 1 Cup white sugar
  • 0.75 Cup apple butter
  • 1 Teaspoon vanilla extract
  • 0.5 Cup whole bran cereal
  • 1 Cup sour cream
  • 2 Large eggs, whisked

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a 9x13-inch pan.
  2. Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and pecans in a bowl.
  3. In another bowl, sift together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy. Add the eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next.
  5. Mix in the apple butter, vanilla extract, and bran cereal.
  6. Gradually add the sifted dry ingredients alternately with the sour cream, mixing well after each addition.
  7. Pour half of the batter into the prepared pan and sprinkle with half of the topping mixture.
  8. Pour the remaining batter into the pan and top with the rest of the topping.
  9. Bake in the preheated oven for about 40 minutes, or until a tester inserted in the center comes out clean.
