Ingredients

  • 5 Whole apples, peeled and shredded
  • 1 Tablespoon (tbsp) ground cinnamon
  • 1 Tablespoon (tbsp) white sugar
  • 2 Whole eggs
  • 0.5 Cups white sugar
  • 1 Teaspoon (tsp) vanilla extract
  • 0.5 Cups olive oil
  • 0.33 Cups orange juice
  • 1.5 Cups white spelt flour
  • 1.5 Teaspoons (tsp) xanthan gum
  • 2 Teaspoons (tsp) baking powder
  • 0.25 Teaspoon (tsp) salt
  • 2 Teaspoons (tsp) ground cinnamon

Steps

  1. Preheat your oven to 400 degrees F (200 degrees C). Grease a 9-inch Bundt pan.
  2. In a bowl, toss together the shredded apples, 1 tablespoon of cinnamon, and 1 tablespoon of sugar until evenly coated. Set aside.
  3. In a large bowl, whisk together the eggs, 0.5 cup of sugar, and vanilla extract until the mixture is fluffy.
  4. Stir in the olive oil, orange juice, spelt flour, xanthan gum, baking powder, salt, and 2 teaspoons of cinnamon to form a batter.
  5. Fold the apple mixture into the batter until well combined.
  6. Pour the batter into the prepared Bundt pan.
  7. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  8. Allow the cake to cool in the pan for about 15 minutes before turning it out onto a wire rack to cool completely.
