- 2 Teaspoons (tsp) baking powder
- 0.25 Teaspoon (tsp) salt
- 2 Teaspoons (tsp) ground cinnamon

- Preheat your oven to 400 degrees F (200 degrees C). Grease a 9-inch Bundt pan.
- In a bowl, toss together the shredded apples, 1 tablespoon of cinnamon, and 1 tablespoon of sugar until evenly coated. Set aside.
- In a large bowl, whisk together the eggs, 0.5 cup of sugar, and vanilla extract until the mixture is fluffy.
- Stir in the olive oil, orange juice, spelt flour, xanthan gum, baking powder, salt, and 2 teaspoons of cinnamon to form a batter.
