- 1.5 Cups pearl barley
- 4.5 Cups water
- 1 Tablespoon (tbsp) canola oil
- 1 Red onion, sliced
- 0.75 Cups dried apricots, sliced
- 0.5 Cups almonds, sliced
- 2 Tablespoons (tbsp) fresh parsley, minced
- 1 Cup plain low-fat yogurt
- 2 Tablespoons (tbsp) honey
- 1 Whole lemon, juiced
- 0.5 Teaspoon (tsp) cinnamon, ground
- 0.5 Teaspoon (tsp) turmeric, ground
- 0.5 Teaspoon (tsp) salt
- 1 Pinch nutmeg, ground
Steps
- Rinse the pearl barley in a fine sieve. Bring 4.5 cups of water to a boil in a heavy saucepan. Stir in the barley, and return to a boil. Cover, reduce heat, and simmer until the water is absorbed, about 45 to 50 minutes. Allow to cool to room temperature.
- Heat 1 tablespoon of canola oil in a small skillet over medium heat. Add the sliced red onion and sauté until golden brown.
- In a large serving dish, combine the cooked barley, sautéed onion, sliced apricots, sliced almonds, and chopped parsley. Toss to mix.
- In a small bowl, whisk together the plain low-fat yogurt, honey, lemon juice, ground cinnamon, ground turmeric, salt, and a pinch of ground nutmeg.
- Pour the yogurt dressing over the barley mixture and toss well to combine. Serve at room temperature.
