Ingredients

  • 0.25 Ounces (oz) unflavored gelatin, divided
  • 0.25 Cups cold water
  • 1 Cup white sugar, divided
  • 4 Tablespoons (tbsp) all-purpose flour
  • 0.5 Teaspoon (tsp) salt
  • 1.5 Cups milk
  • 0.75 Teaspoon (tsp) vanilla extract
  • 1 Cup flaked coconut
  • 0.5 Cup heavy whipping cream
  • 3 Whole egg whites
  • 0.25 Teaspoon (tsp) cream of tartar
  • 1 9-Inch pie crust, baked
  • 2 Tablespoons (tbsp) flaked coconut

Steps

  1. Sprinkle the gelatin over cold water and set aside to soften.
  2. In a saucepan, combine 0.5 cups of sugar, flour, and salt. Gradually stir in milk. Cook over low heat, stirring until it boils. Boil for 1 minute, then remove from heat.
  3. Transfer the mixture to a large bowl and stir in the softened gelatin. When partially set, beat with a rotary mixer until smooth. Blend in vanilla and 1 cup of coconut.
  4. Whip the cream until stiff and gently fold it into the coconut mixture.
