  • 4 Pieces chicken breast halves, skinless, boneless
  • 1 Cups Swiss cheese, shredded
  • 0.5 Teaspoons (tsp) paprika

Gradually whisk in 1 - Cups chicken broth and 0.5 - Cups milk. Bring the mixture to a boil, stirring constantly, and let it boil for about 2 minutes until thickened. Remove from heat and set aside.
  2. Prepare the Crab Filling: In a large skillet, melt the remaining 1 - Tablespoon (tbsp) butter over medium heat. Sauté the 0.25 - Cups yellow onion, minced until tender. Add the 6 - Ounces (oz) crabmeat, drained, 4.5 - Ounces (oz) mushrooms, sliced, 0.33 - Cups saltine crackers, crushed, 2 - Tablespoons (tbsp) fresh parsley, minced, 0.5 - Teaspoons (tsp) kosher salt, and 1 - Pinch black pepper. 4. Prepare the Chicken: Pound 4 - Pieces chicken breast halves to a 1/4 inch thickness. Spoon about 1/4 of the crab mixture onto the edge of each chicken breast. Roll up the chicken breasts and secure them with toothpicks. Place the chicken rolls in a lightly greased 9x13 inch baking dish.
  5. Bake the Chicken: Pour the remaining white sauce over the chicken rolls. Cover the dish with foil and bake in the preheated oven for 30 minutes, or until the chicken juices run clear.
  6. Add the Cheese and Finish Baking: Remove the foil, sprinkle the chicken with 1 - Cups Swiss cheese, shredded, and 0.5 - Teaspoons (tsp) paprika. Return to the oven and bake, uncovered, for an additional 5 minutes, or until the cheese is melted and bubbly.
