Ingredients

  • 2 - 3 Ounces (oz) packages raspberry flavored gelatin mix
  • 1 - 16 Ounces (oz) can whole cranberry sauce
  • 0.5 - Teaspoons (tsp) orange zest, zested
  • 0.33 - Cups orange juice
  • 2 - Tablespoons (tbsp) lemon juice
  • 1 - 20 Ounces (oz) can pineapple tidbits, drained
  • 0.75 - Cups celery, sliced

Steps

  1. Drain the syrup from the canned pineapple into a measuring cup. Add enough water to the syrup to make 1 cup of liquid.
  2. In a medium saucepan over medium heat, bring the pineapple juice mixture to a boil. Add the raspberry gelatin mix and stir until completely dissolved.
  3. Remove the saucepan from heat and stir in the whole cranberry sauce, orange zest, orange juice, and lemon juice. Mix until well combined and allow the mixture to cool until it begins to thicken slightly.
  4. Once the mixture is slightly thickened, fold in the drained pineapple tidbits and sliced celery.
  5. Pour the mixture into a mold or an 8-inch square pan.
  6. Refrigerate the salad for about 2 hours or until it is firm.
  7. Once set, unmold the salad onto a serving platter or cut into squares if using a pan. Serve chilled and enjoy the refreshing flavors!
