- 0.5 Cups (cup) butter, divided
- 1.5 Teaspoons (tsp) cinnamon, ground
- 0.5 Teaspoons (tsp) five-spice powder
- 4 Whole acorn squash, halved
- 1 Cup (cup) yellow onion, minced
- 1 Cup (cup) celery, minced
- 1 Cup (cup) red bell pepper, minced
- 1 Tablespoon (tbsp) garlic, minced
- 2 Quarts (qt) seafood stock
- 1 Cup (cup) heavy cream
- 1 Cup (cup) fresh basil, sliced
- 1 Teaspoon (tsp) nutmeg, ground
- 1 Pinch sea salt, to taste
- 1 Pinch white pepper, to taste
- 2 16 Ounces (oz) packages crawfish tails, packaged
Steps
- Preheat your oven to 375 degrees F (190 degrees C). Place the acorn squash halves cut-side up on a baking sheet. Brush each half with melted butter and sprinkle with brown sugar, cinnamon, and five-spice powder. Roast in the oven for 45 minutes or until tender.
- In a large skillet, melt the remaining butter over medium heat. Add the onion, celery, red bell pepper, and garlic. Sauté until the vegetables are soft and fragrant, about 5 minutes.
- Stir in the crawfish tails and cook for another 5 minutes. Add the seafood stock, heavy cream, basil, nutmeg, sea salt, and white pepper. Simmer for 10 minutes, allowing the flavors to meld.
- Remove the squash from the oven and fill each half with the crawfish mixture. Return to the oven and bake for an additional 20 minutes.
